American breeders together with molecular biologists brought a new variety of potato, rich in vitamins and devoid of carcinogens.

Another feature of the new varieties, according to the press service of the Colorado state University, that the flesh had red or purple, not yellow and white like a regular potato.

“The color of flesh and peel of potatoes largely reflects its contents. For example, purple potatoes and red color contains a huge amount of antioxidants,” said American breeders, who brought a new variety.

For many years the team of David Hill from the University of Colorado located in Fort Collins, worked on breeding of such varieties of potatoes, which most strongly reflect this relationship. These varieties are rich in antioxidants, vitamin C, iron, potassium, zinc, trace minerals, folic acid, and various phenolic compounds.
